Ingredients:
- 2 pork tenderloins
- Salt and black pepper to taste
- 1 cup frozen cherries, pitted
- 1 cup Merlot wine
- 8 slices bacon
- 2 tablespoons olive oil
- 2 tablespoons balsamic glaze
- Fresh thyme for garnish
Instructions:
Before you start cooking, heat the oven to 375F 190C
Add salt and black pepper to the pork tenderloins
Put frozen cherries and Merlot wine in a small saucepan
Over medium-low heat, bring to a simmer and cook until the wine is half gone and the cherries are soft
Put away
Put four slices of bacon around each pork tenderloin
If necessary, use toothpicks to hold the bacon in place
Warm up the olive oil in a skillet that can go in the oven over medium-high heat
The pork tenderloins wrapped in bacon should be seared until the bacon is crispy all over
Add the cherry Merlot sauce to the pork tenderloins and mix it in
Place the skillet in an oven that has already been heated and roast the pork for 20 to 25 minutes, or until it reaches 145F 63C inside
Take the pork out of the oven and let it rest for a few minutes
Then cut it into slices
Cover the pork with a balsamic glaze
Add fresh thyme on top, and serve
