Ingredients:
- 200g rice noodles
- 200g mixed seafood shrimp, squid, mussels
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 small onion, sliced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 2 tbsp Thai red curry paste
- 400ml coconut milk
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- Juice of 1 lime
- 1 handful fresh cilantro, chopped
- 1 handful fresh basil leaves
- Salt and pepper to taste
Instructions:
Cook rice noodles according to package instructions, drain, and set aside
In a large skillet, heat vegetable oil over medium heat
Add minced garlic and sliced onion, cook until fragrant
Add red bell pepper and carrot, stir-fry for 2-3 minutes
Push vegetables to the side of the skillet and add Thai red curry paste, cook for 1 minute
Pour in coconut milk, fish sauce, and brown sugar, stir well to combine
Bring the mixture to a simmer, then add mixed seafood
Cook for 5-7 minutes until seafood is cooked through
Stir in lime juice, chopped cilantro, and basil leaves
Season with salt and pepper to taste
Divide cooked noodles into bowls, ladle seafood curry over the noodles
Garnish with additional herbs if desired
Serve hot and enjoy!
